RECIPE
▢ 2 ¾ cups all-purpose flour (343 g)
▢ 1 tablespoon baking powder (16 g)
▢ Zest of 1 orange
▢ 4 eggs (separate the yolks from the whites)
▢ 1 cup orange juice
▢ 1 ½ cups sugar
▢ 1 cup + 2 tablespoons butter (250 g)
INSTRUCTIONS
- Beat the egg whites until stiff peaks form and set aside.
- In another bowl, beat the butter and sugar together until light and creamy.
- Add the egg yolks one at a time, mixing well after each addition.
- Stir in the orange zest.
- Gradually add the dry and liquid ingredients alternately, mixing until combined.
- Finally, fold the beaten egg whites into the batter gently using a spatula (do not use a mixer).
- Pour the batter into a previously greased and floured baking pan.
- Bake in a preheated oven at 350°F (180°C) for about 40 minutes, or until a knife or toothpick inserted in the center comes out clean.
