Cheesecake

RECIPE

▢ 2 cups cream cheese
▢ 1/2 cup sugar (to taste)
▢ 3 large eggs
▢ 1 cup heavy whipping cream
▢ ⅙ cup all-purpose flour
▢ ½ tsp vanilla extract (optional)
▢ ¼ tsp salt

INSTRUCTIONS

  1. Preheat oven to 400°F. Lightly grease a springform pan (9 in.) and line the sides with parchment, ensuring paper extends 4 inches beyond the top of the pan. Place the prepared pan onto a baking sheet and set aside.
  2. Place cream cheese and sugar into a mixing bowl and mix for 30 sec
  3. Scrape down sides of mixing bowl with spatula and mix 30 sec until smooth.
  4. Add eggs, whipping cream, flour, vanilla, and salt and mix for 30 sec
  5. Scrape down sides of mixing bowl with spatula and mix for a further 1 min 30 sec until smooth.
  6. Pour batter into prepared pan and place pan on baking sheet, then into the oven. Bake 60 minutes (400°F). 
  7. Allow to cool in the pan. Once cool, carefully open the springform pan. Remove parchment and transfer cheesecake to a serving plate before serving.
